Why Google changes the AI Overview time to time?

I'm traking the response from AI Overview weekly and i see some fluctuations in the response. Do we know why this happens? How often Google caches the response? From my side, it seems that response varies a lot unless in one search i saw, citations also changes but there are some that are some that are consistent. I guess this also depends on what pages appears on organic serp too, if that fluctuates the overview also changes? Seems very expensive
