Where to start?

So I have this idea of starting a sunflower butter business, and so far all I’ve done is buy a bulk quantity of sunflower seeds ( ~2 kg) to create a recipe that I think people will like. Beyond that, I’m not sure where to go. I’m torn at the moment with attempting some market research, or just jumping in at the local farmers market.
